DONUT Kill Our Holiday Vibe!

Holidays are my favourite time of the year. We love spending time with family and getting together over delicious festive feasts. While a lot of holiday treats can be packed with sugar, there are still so many healthy options too! I’m not saying you should skip the egg nog, but there is also a place for some healthier goodies too!

For this month’s So Yummy Mommy recipe, Sabrina and I decided to share a gingerbread holiday Collagen donut. I have to admit, I was a bit skeptical at first. But after the first bite, I was so impressed! Sabrina is a mastermind when it comes to putting together these incredible recipes!

Before sharing this unique festive recipe, I thought I would just quickly give you the low down on the benefits of collagen. Without taking a deep dive into the science, I’m sure you have heard the word Collagen being thrown around a lot lately. Sure, it’s considered one of the “trendier” supplements right now, but it’s on the hot list for a reason. Benefits include improving skin hydration, signs of aging and joint health! Did you know that our collagen production starts to decline in our 20s! Ahhhh. I was shocked by this fact.

Please note that collagen supplements are not indicated for children, so we made two batches - one with collagen and one with equal parts almond flour.

Gingerbread Collagen Donuts

Yields ~ 6 donuts

Ingredients

1 ¼ cup of almond flour 

3 scoops of  Genuine Health #CleanCollagen

2 eggs 

¼ tsp baking soda

3 Tbsp maple syrup

1 tsp pure vanilla extract

2 tbsp coconut oil

1 tsp apple cider vinegar 

3 tsp ginger powder

½ tsp cinnamon

¼ tsp allspice

¼ tsp clove

Chocolate glaze

½ cup chocolate chips

1 tsp of coconut oil

Directions:

1. Preheat the oven to 350 degrees.

2. Mix all dry ingredients first.

3. Add in all the wet ingredients.

4. Pour batter into greased donut molds. Do not overfill them; the batter does rise when baking.

5. Bake for 10-15 minutes until golden brown. Let cool before removing from pan.

6. Melt chocolate chips and coconut oil together. Dip the top half of the donuts into the chocolate glaze.

Donut Worry, Be Merry!

For those of you who are worried about straying for your traditional holiday recipe, don’t be! This recipe was also a lot easier than I expected. Truth: I’ve always been guilty of resorting to the same ol’ Christmas desserts, so this healthier spin on donuts was a good change for me. Keep in mind, there are so many common holiday treats that can be made “healthy-ish” if you really want. I just love that these donuts are cute and creative. Move over, Christmas cake!
