Get Out of a Rut with School Snacks!
We are two months into the school year and if your kids are anything like my Harper then they are probably getting a little bored of the same ol’ snacks in their lunch box. I knew it was time to change things up and give my daughter’s snack situation a refresh!
Last month I announced our new series SO YUMMY MOMMY and it made perfect sense for Sabrina and I to explore some nut-free snack options this month. I know I’m not alone when it comes to wanting to pack some easy, but healthy snacks for our little ones. I was prepared to put in some work and get messy with Sabrina in the kitchen to bring you guys Nut-Free Granola Bars. But guess what, these no-bake bars were no sweat! More importantly, Harper loves them just as much as I do!
Nut-Free Granola Bars
Ingredients:
· 1 cup old fashioned rolled oats (gluten free, if desired)
· 1 cup Pitted Dates
· ½ cup sunflower butter
· ¼ cup raw sunflower seeds
· ¼ cup raw pumpkin seeds
· ¼ cup flaxseed meal
· ¼ cup chia seeds
· ¼ cup dark chocolate chips
Directions:
Step 1
In a food Processor combine oats, sunflower butter and dates.
Step 2
Mix until well combined. Be sure to scrape the sides and pulse a few more times.
Step 3
Transfer to a bowl and mix in sunflower and pumpkin seeds, flax meal, chia seeds and chocolate chips. It’s ok to use your hands for this, it does get tricky, but don’t give up!
Step 4
Once it’s all combined, transfer to a silicon loaf pan, or greased (with coconut oil) pan. Press until nicely flat on top and cut into desired width.
Drizzling some melted chocolate on top before cutting is always an added treat. Feel free to add other dried fruit or fun ingredients to this base; just be sure to do it once you have completed the first step. Place in fridge to be enjoyed that school week!
