Eggstraordinary Easter Energy Balls

Some Bunny is Hungry!

Sabrina and I believe in BALANCE, so when a holiday like Easter rolls around you better believe we are satisfying our sweet tooth. Candy-coated chocolate eggs will always have a place in my heart, so we decided to incorporate them into our #SoYummyMommy recipe this month. We took Sabrina’s tried and true energy ball recipe and gave it a touch of Easter by way of candy-coated chocolate eggs. These are so good that the entire family will enjoy them and I’m almost positive the Easter Bunny will want some too!

Ingredients:

  • 1½ cups whole rolled oats (chopped lightly in food processor)

  • 1½ cups crispy rice cereal

  • ½ cup shredded coconut (sweetened or unsweetened)

  • ¼ cup chia seeds

  • ¼ cup flax seed (ground)

  • ½ cup natural peanut butter

  • ¼ cup virgin coconut oil

  • ¼ cup honey

  • ¼ cup candy-coated chocolate eggs 

Directions:

  1. Stir together peanut butter, coconut oil and honey in a small mixing bowl until smooth

  2. Combine dry ingredients in a large bowl.

  3. Pour peanut butter mixture over dry ingredients and mix until evenly combined.

  4. Chill mixture for 20 -40 minutes. Press 2 tablespoons of mixture together into small balls and store in fridge - you can also press the mix into a greased pan, and cut into squares.

  5. Chill balls for 30 minutes before enjoying 

  6. Store in fridge for up to 2 weeks.
