Happy (and Healthy) Valentine's Day

Wishing you a happy and healthy Valentine’s Day. Okay maybe gluten-free chocolate isn’t exactly on the menu, but we hope you celebrate LOVE not only today but every day of the year!! I'm sure you also had some time to satisfy your sweet tooth too!

Pssst … if you're wanting to indulge a little bit more, but want to try a healthier spin on the traditional chocolate chip cookie, you gotta check out this recipe! It was one that was passed to me from a friend, so I’m not sure of it’s original origin and unfortunately I can’t give this person the credit they deserve. Nonetheless, this Chocolate Chip Protein Cookie is pretty darn delicious.

Ingredients

  • 1 1/2 cups whole wheat flour

  • 2 cups whey protein powder

  • 1 tsp baking powder

  • 2 tsp ground cinnamon

  • 1 1/2 cups low-fat, small-curd cottage cheese

  • 1/2 cup honey

  • 1/4 cup coconut oil

  • 1 egg

  • 2 tsp vanilla extract

  • 1 cup rolled oats

  • 1/2 cup semisweet chocolate chips

  • 1/2 cup walnuts, chopped

Instructions

  • Preheat oven to 350 degrees.

  • Combine the first 4 ingredients in a large bowl and mix.

  • In a separate bowl, combine the next 5 ingredients and whisk together.

  • Add wet ingredients to the dry and combine thoroughly with a fork. Mix in the oats, chocolate chips and walnuts.

  • Drop by the teaspoon onto an oiled or parchment paper-lined baking tray. Bake 12 minutes until the cookies are slightly brown on top.
