Chocolate Chip Cookies With a Healthy Twist

Did you know that August 4th is National Chocolate Chip Cookie Day? If you know me then you know that cookies are one of my favourite treats. I don’t discriminate and pretty much love them all. Over the past year and a bit, I think we can all agree we did a lot of baking at home during “lockdown life”. I had the chance to experiment with so many fun chocolate chip cookies recipes, but I have to say that there was one that really stood out. I wanted to make sure I shared this recipe with you because it’s so unique and just THAT good!

Strawberry Protein Chocolate Chip Cookies

These cookies are delicious, but they are also packed with protein. I hope you love them as much as I do!

1 cup of instant oats

3/4 cup whole wheat flour

1 1/2 tsp baking powder

1/8 tsp salt

2 tbsp coconut oil

1 large egg

1 tsp vanilla extract

1/2 cup honey

3/4 cup fresh or frozen strawberries, chopped

1/4 cup of chocolate chips

1 scoop of Vanilla protein powder (optional)

Instructions:

  1. Preheat the oven to 175C/350F. Set a large tray lined with parchment paper or use a cookie sheet.

  2. In a large mixing bowl, combine all your ingredients with half the chocolate chips. Mix well. The consistency should be a little sticky and moist. Set aside the remaining chocolate chips. 

  3. Form small balls of dough and place each one on the lined tray/cookie sheet. Press each ball into a cookie shape. Top each with a few chocolate chips. Bake for 10-12 minutes, or until golden on the edges.

  4. Remove from the oven and allow to cool before transferring.
