Springtime Strawberry and Spinach Salad

As a busy mom, I'm always on the lookout for healthy and delicious recipes that are quick and easy to prepare. And now that spring is here, I'm loving all the fresh and colourful produce that's in season. That's why I wanted to share one of my favourite springtime recipes with you - my strawberry and spinach salad.

I love this salad because it's so simple to prepare, yet it's bursting with flavour and nutrients. Spinach is one of my favourite greens because it's rich in vitamins A and C, iron, and calcium. Strawberries are a great source of antioxidants, fibre, and vitamin C, while feta cheese and almonds add some healthy fats and protein to the mix.

This salad is perfect for a quick and healthy lunch or dinner, and it's also great for meal prepping. I often make a big batch at the beginning of the week and store it in an airtight container in the fridge. That way, I have a healthy meal option ready to go whenever I need it.

Ingredients:

  • 4 cups fresh spinach leaves

  • 1 cup sliced strawberries

  • 1/4 cup crumbled feta cheese

  • 1/4 cup sliced walnuts

  • 2 tablespoons balsamic vinegar

  • 1 tablespoon olive oil

  • 1 teaspoon honey

  • Salt and pepper to taste

Directions:

  1. Start by washing and drying your spinach leaves. Place them in a large salad bowl.

  2. Add your sliced strawberries to the bowl, followed by the crumbled feta cheese and sliced almonds.

  3. In a small bowl, whisk together the balsamic vinegar, olive oil, honey, salt, and pepper. Drizzle the dressing over the salad and toss to combine.

  4. Serve immediately and enjoy!
