Love at First Bite

February is the month of love and because sugar cookies and chocolate dipped strawberries are the typical Valentine’s day favourites, Sabrina and I thought that we would have a pizza party for this month’s So Yummy Mommy recipe. But this is not your regular pizza, but it taste just as good. Promise!

I Love You More Than Pizza!

In the spirit of LOVE, we made some heart-shaped cauliflower pizza! Guys, I was skeptical at first because I love my pizza, but this is soooo good and Harper AND Noa loved it too! #MomWin

Here’s the recipe:

Ingredients:

2 pounds frozen cauliflower florets , riced

1 egg , beaten

1/3 cup soft goat cheese 

1/4 tsp of salt

1 teaspoon of Italian seasoning *optional

Directions:

  1. Preheat the oven to 400ºF. 

  2. Pour the completely thawed, cauliflower into a large food processor. Process until a rice-like texture is created. If you bought frozen riced cauliflower, you can skip this step. 

  3. Transfer processed cauliflower to a dishtowel or cheesecloth. Wrap up the cauliflower in the dishtowel/ cheesecloth and squeeze all the moisture out! This step is important to ensure your crust is not mushy. 

  4. In a large bowl, mix egg, goat cheese, and spices.

  5. Spread the dough out onto a baking sheet lined with parchment paper. 

  6. Bake for 30-35 minutes at 400F, until completely dry and golden. If you like extra crispy crust use the parchment paper to flip the crust over, and bake again until the other side is nice and dry, about 10 to 15 more minutes. 

  7. It’s now time to build you pizza. Add your favorite pizza toppings to the crust, and then bake at for an additional 5-10 minutes, or until the cheese as a desired consistency.

Slice, Slice Baby.

Here’s the thing, cauliflower doesn’t have the best reputation with the kiddies, so don’t even tell them until after they devour a slice! That’s what I did with Harper and she was surprised at how much she enjoyed it. Get creative with toppings and have fun with this. And don’t forget … the most important ingredient of all is LOVE!
