Healthy-ish Carrot Cake Recipe for Easter

Easter is just around the corner and I can't wait to celebrate with my loved ones! But, like many of you, I struggle with finding a balance between indulging in yummy treats and staying on track with my healthy eating goals. That's why I'm excited to share one of my favourite recipes with you - a healthier twist on the classic carrot cake that is both delicious and nutritious.

This recipe uses whole-grain flour and natural sweeteners like honey and unsweetened applesauce instead of refined sugar. Plus, the warm spices like cinnamon, nutmeg, and ginger give the cake a cozy and comforting flavour that is perfect for a springtime celebration.

I love that this recipe includes carrots, which not only add a delicious sweetness to the cake but are also packed with essential nutrients. And the best part? You can indulge in a slice (or two) without any guilt!

So, grab your apron and let's get baking! This recipe is super easy to follow and the end result is absolutely delicious. Don't forget to top it off with a yummy cream cheese frosting, and maybe even some extra grated carrots or chopped nuts for decoration.

Ingredients:

  • 2 cups whole wheat flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1 tsp ground cinnamon

  • 1/4 tsp ground nutmeg

  • 1/4 tsp ground ginger

  • 1/4 tsp salt

  • 1/2 cup unsweetened applesauce

  • 1/2 cup honey

  • 2 large eggs

  • 1/3 cup coconut oil

  • 2 cups grated carrots

  • 1/2 cup raisins (optional)

For the frosting:

  • 8 oz cream cheese, softened

  • 1/4 cup honey

  • 1 tsp vanilla extract

Instructions:

  1. Preheat the oven to 350°F (180°C). Grease a 9-inch round cake pan with cooking spray.

  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.

  3. In a large bowl, beat together the applesauce, honey, eggs, and coconut oil until smooth.

  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  5. Fold in the grated carrots and raisins (if using).

  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the cake to cool completely in the pan.

  9. To make the frosting, beat together the cream cheese, honey, and vanilla extract until smooth.

  10. Spread the frosting evenly over the top of the cake.

  11. Decorate with additional grated carrots or chopped nuts, if desired.
